Vegan Creative Cuisine: Veggie Burgers with Home-Made Ketchup and Potato Wedges

For the burgers:

  • Lentils
  • Onion
  • Zucchini
  • Piquillo peppers (sweet red pepper)
  • Chickpea flor

For the potato wedges:

  • Potatoes
  • Paprika
  • Breadcrumbs
  • Oregano

For the ketchup:

  • 1 tender onion
  • 750 gr peeled tomatoes
  • Chili
  • 200gr brown sugar
  • Mustard
  • Salt and pepper
  • Vinegar
  • White wine
  • Soja sauce

First of all, we will start with the ketchup, because the cooking time is quite long. Chop the onion in thin slices and place it a frying pan. Ideally, we want the onion to be tender, but without colour, so we will use a low heat. Once the onion is ready, we add the tomatoe. In this case, we used canned tomatoe (peeled whole tomatoes) and chopped it in very thin slices as well. Then, bring the tomatoe to the boil and add a splash of white wine. Let the wine evaporate and add brown sugar and vinegar (we used rice vinegar, white wine vinegar and a splash of sherry). As always, the quantities that we are offering are not absolute. A ketchup is a bittersweet sauce and depends on the taste of each one of us. Bring it to the boil again and add the chili, the soja sauce and a little bit of mustard. Cover it and let it cook for 10 minutes approximately. Add salt and pepper, as necessary, and blend the mixture. Then, cover the frying pan again and let it cook over a low heat for about 20 minutes.

Prepare a pot with plenty of water and salt, and bring it to the boil. Wash the potatoes and, without peeling them, cut them in wedges. When the water is boiling, cook the potatoes until these are tender. Then, cool down the potatoes quickly in order to stop the cooking process. In a separate bowl, prepare a mixture containing breadcrumbs, paprika and oregano. Before frying the potatoes, we will cover these with said mixture.

In another pot we start cooking the lentils, taking care of not using too much water. In a separate frying pan, sauté the thinly chopped vegetables. Once the lentils are tender, strain the lentils and crush these with the help of a fork. Mix the vegetables with the lentils and add a little bit of chickpea flour in order to obtain more consistency. Be careful with the flour, because otherwise the burgers will taste of raw flour. Shape the burgers and let these settle for a while.

Finally, cover the potatoes with the mixture of breadcrumbs, paprika and oregano, and fry the wedges over a high heat. Now, prepare a grill or frying pan in order to heat and roast the burgers. You can even sprinkle ground corn for a crunchy texture.
